These cupcakes are so good, I'm convinced if I knew what Butterbeer tasted like I may have actually read Harry Potter.
(Apparently, I'm food motivated?!)
I found the recipe here at Amy Bites.
Originally, I was slightly disheartened to see Cream Soda in the recipe as I don't particularly care for it.
But it adds the perfect amount of sweetness.
And in my book, I'll take Cream Soda over Root Beer anyday.
I was so pleasantly surprised to learn that whoever dreamed up the flavor for Butterbeer imagined it to be butterscotch based instead of Root Beer based.
The best part of these cupcakes is the butterscotch ganache on the inside. Or maybe it's the brown sugar homemade buttercream. Or maybe it's the actual cupcake.
Ok, Ok....it's the whole darn cupcake.
Because the Butterscotch ganache needs to be cooled before you use it, I'd make it first.
(Or make it last, then take a Harley ride while it cools)
It's so simple. Just melt one 11oz. bag of butterscotch chips into 1 cup of Heavy Whipping Cream.
Let boil for one minute. Remove from heat and cool.
Make your cupcakes according to the recipe. Then pull them out of the oven and let cool. I always let them sit for about 5 minutes in the pan, then I move them to a wire rack.
If you're like me and can't wait to taste what you've just created, go ahead and have one.
After all, I wouldn't want to accidently make anyone sick. I absolutely HAVE to try them out.

Use your butterscotch ganache to fill the cupcakes.
Save whatever's leftover for a homemade ice cream topper.
I'll let you in on a little secret. I refuse to buy the purpley rubber band like things Wilton sells to close your icing bag. You can keep your fingers pinched around it or grab a (new) hair twisty. I once bought a pack of small black hair twisties on accident. They have finally found their purpose in my life.
Then, if you're like me, take obsessive amounts of pictures of your finished product.
I think it's beautiful.
Could just be the shiny gold wrapper.
Or that drip of butterscotch drizzle screaming at me.
No matter how you ice them, they will still be delicious.
So have one.
I promise they're calorie free.
