I have another confession.
Hello Kitty gives me the creeps. Kind of like the sock monkey.
I usually like to pretend they don't exist...that's how much they freak me out.
But this cookie request came from a very special little girl.
She's my sister-in-law's niece.
These cookies are super, duper special because they're gluten free.
This is the first order of unique cookies for this little girl and I wanted them to look just like Hello Kitty. Because of her allergy, Abby doesn't usually get to eat the fun party foods.
I made the bow as a royal icing transfer to give the cookie some depth.
I learned a lot from making these cookies.
Like the fact that I'm sooooo thankful I don't have to eat gluten-free.
The mix tasted pretty good, but I didn't have enough dough left over to make any extra cookies to be able to try one after it was baked.
I'll let you in on a little secret.
All of the Hello Kitty cookie heads in the picture below came from the same shape cookie cutter. Evidently the dough and my oven decided they should come out being different sizes.
The gluten free dough was extremely sticky and the cookies were very fragile when they came out of the oven. In fact, I'm in awe that the tiny little cracks that appeared in the icing aren't showing.
You can tell the different sizes in the picture below. The one on the left came from my first roll out of dough. They were thicker....which I quickly learned is not a good thing with gluten free dough. Thicker=more spread. The one on the right is my 'prayer' cookie...as in "Dear God, please, please let me be able to piece together enough dough to use the cookie cutter and make the one last cookie I need".
All in all I don't think they turned out too shabby.
But gluten free will definitely not be a regular on my list.
